At The Rolling Spring Roll in Syosset, Serving Vietnamese Classics

TạiRolling Spring Roll, các món khai vi được trình bày rõ ràng để gọi. Những món được phủ với thịt heo và tôm giòn ngon. Kèm với với rau diếp, bạc hà và ngò trên mặt; thực khách được hướng dẫn cách gói cuốn trong một chiếc lá rau diếp và nhúng nó vào giấm đi kèm. Chúng tôi cũng đã cố gắng thử cuốn rau; trong cũng giống nhưng không được ngon lắm. Trở lại với món của  "người chiến thắng là những cuốn tôm xuân; mỗi lớp của cuốn được bao bọc bởi thịt tôm giòn.

 

 

 

Các món mùa hè, một kết hợp của bún, tôm, thịt lợn, rau diếp và rau thơm, cuộn trong bánh tráng mỏng và phục vụ lạnh, không thật sự hấp dẫn.

 

Tuy nhiên, chúng tôi thích bánh bao Việt, mà là tương tự như của Trung Quốc nhưng bao quanh bởi một lớp mỏng bột, và phục vụ với nước chấm gừng hành lá-đậu nành.

Joe Bui, who fled Vietnam for the United States in 1980, purchased a food truck in 2011 and named it the Rolling Spring Roll. Two years later he had a brick-and-mortar restaurant in Farmingdale with the same name. This January, he opened a second Spring Roll, in the Muttontown Plaza in Syosset, the former location of Villa Parma.

The Farmingdale restaurant, which recently reopened, was closed for a few months while Mr. Bui, who is both chef and owner, concentrated on the new spot.

The Syosset branch is larger than its Farmingdale sibling and has a more extensive menu. The décor is spare, with salmon-colored walls, hanging red lights, bare-wood tables and hardwood bench seating along the walls. Buckets set on the tables hold chop sticks, forks and paper napkins.

Servers, who take orders on iPads, are friendly and speedy but are often elsewhere when needed.

At a restaurant called the Rolling Spring Roll, it’s obvious what appetizers to order. Those filled with pork and shrimp were crispy and tasty. They arrived with lettuce, mint and cilantro on the side; diners were told to wrap a roll in a lettuce leaf and dip it in the accompanying vinaigrette. We also tried the vegetarian spring roll; just as crisp but not as tasty. Back in the winners’ circle were the shrimp spring rolls; each featured a whole large shrimp enveloped in a crispy wrapper.

The summer rolls, a mix of rice noodles, shrimp, pork, lettuce and herbs, rolled in thin rice paper and served cold, were not as compelling.

However, we liked the Vietnamese dumplings, which were similar to the Chinese version but surrounded by a thinner layer of dough, and served with a ginger-scallion-soy dipping sauce.

I’ve found that people are either crazy for chicken wings or wonder what the fuss is about. I’m usually in the latter camp. But the wings served here made both groups happy. They were crispy and juicy in the right places, and were served in a slightly spicy, Vietnamese sweet-chili sauce.

The dish that will bring me back to the Rolling Spring Roll is the pho, a rice noodle soup that is available in four versions. I tried the beef, which included thin slices of rare beef, sliced short rib and meat balls. A separate plate accompanies each bowl of soup. It is piled high with fresh bean sprouts, lime wedges, Thai basil and thin slices of jalapeño, to be added to the pho at the diner’s discretion.

When I talked to Mr. Bui on the telephone after my visits, he told me he could eat pho four or five times a week. I think I could, too. It’s his most popular dish.

Banh mi, another Vietnamese classic — a sandwich on a toasted baguette — comes filled with the meat of one’s choice, along with fresh herbs, cucumber, pickled carrots and daikon. The night I tried to order it, the restaurant had run out of bread. It was only 5:30.

Three impressive entrees were the marinated and grilled short ribs; a dish with gently fried shrimp paste made with shrimp and pork and wrapped around sugar cane; and a puffy crepe filled with pork and shrimp. Skip the whole branzino; it was overcooked and dry. Also skippable: the shaking beef, which featured steak cubes that were tasty but tough.

If I were to rate the restaurant only on the spring rolls and pho, it would receive an “excellent.” Some of the lackluster entrees, however, brought it down a notch.

There are only two desserts. Both resemble thin tapioca pudding, one with banana slices, the other with red beans. I would forego them, and instead, go a few doors down to Mara’s Homemade and indulge in the best chocolate cream pie around.

The Space Narrow storefront in a shopping center. Seating includes small tables, a few large round tables, and a small, four-stool noodle bar in the center of the restaurant. It seats 48 and is fully wheelchair accessible.

The Crowd Families, small groups and couples. The restaurant can get very crowded, so plan ahead.

The Bar Beer selection includes about six South-Asian labels ($6 to $8) and eight wines ($30 to $36 per bottle and $8 to $9 per glass). Standard cocktails are also available.

The Bill The same menu at lunch and dinner. Appetizers are $5 to $9; pho, $8 to $18; banh mi, $8; entrees, $9 to $21.

What We Liked Spring rolls, shrimp spring rolls, Vietnamese dumplings, chicken wings, pho, marinated and grilled short ribs, shrimp paste surrounding sugar canes, pork and shrimp crepe.

If You Go Open Sundays, and Tuesdays through Thursdays, 11:30 a.m. to 9 p.m.; Fridays and Saturdays until 10 p.m. Reservations are not accepted. There is a parking lot.
